Berry Shortcake with Custard

Cubes of sweet shortcake and fresh berries come together splendidly in this lively dessert treat. This lovely layered shortcake dessert makes great use of fresh berries and is a stand-out summer treat great for company or the usual crowd. Take your time to make the custard from scratch; it really makes a huge difference. This dessert is not only very eye-appealing but also very healthy. Enjoy!!!

Makes 8 servings

IngredientsBerry Shortcake with Custard


1/2 cup sugar

3 tbsp cornstarch

2-3/4 cups milk

2 egg yolks, lightly beaten

1 tsp vanilla extract


2 cups all purpose flour

1/3 cup sugar

1 tsp baking powder

1/4 tsp baking soda

6 tbsp cold butter

2/3 cup buttermilk 

4 cups fresh strawberries

4 cups fresh blueberries

8 whole strawberries, halved

1/2 cup whipped cream


1. To make the custard: combine in saucepan 1/2 cup sugar and cornstarch. Stir in milk and bring to a boil, cook until thickened. Remove from heat. Stir a small amount into the eggs and return all to the saucepan, stirring constantly. Remove from heat and stir in vanilla.

2. Transfer to a bowl and cover with a plastic wrap. Press the wrap so it touches the custard so no air will remain. Refrigerate.

3. To make the shortcake: combine the flour, baking powder, baking soda, salt and sugar. Cut in butter until in resembles coarse crumbs.

4. Stir in buttermilk until soft dough forms. Pat gently into a 9 inch square baking pan coated with cooking spray. Bake at 400 F for 15-20 min. Cool completely.

5. Cut the shortcake into 3/4 inch cubes. Alternate layers of shortcake, custard, sliced fruits. Garnish with halved strawberries and whipped cream.

Note: You can use any kind of fruits you like—raspberries, blackberries etc.
