Chicken Sausage and Pepper Dinner

This one-dish skillet dinner features chicken sausage sautéed with bell peppers, onions and garlic, then served with pasta and Parmesan Cheese. This recipe creates a wonderful, mild, sweet and spicy flavor and works best if served with toasted garlic bread and a light salad. A great, simple family dinner for a busy mom. Enjoy!!!

Makes about 4 servings

IngredientsChicken Sausage and Pepper Dinner

2 cups penne pasta, uncooked

1 lb chicken or turkey sausage, sweet or mild

1/2 cup yellow onion, chopped

1/2 cup each red bell pepper, yellow bell pepper and green bell pepper, julienned

1 tbsp fresh basil or 1 tsp dried basil

3 cloves garlic, minced

1/4 tsp dried oregano

1/4 tsp dried thyme

3 tbsp olive oil

2 cans (14-1/2 ounces each) diced tomatoes, drained

Parmesan cheese for serving


1. Cook pasta according to the directions.

2. In a large non stick pan, brown the sausage. Cut the sausages into smaller pieces.

3. In the same skillet sauté the onions, peppers, basil, garlic, oregano, thyme until just tender; add the sausage. Stir in the tomatoes. Cook for another 10 min. Add the cooked pasta and mix well. Sprinkle with Parmesan.
