Chicken and Spinach Rolls 

This amazing dish never fails to amaze everyone's taste buds! I have been making this for the past 3 years for guests, parties, and just for my husband and kids. I use lean ground chicken and whole wheat bread crumbs to make the dish healthier. The filling is very simple and easy to make. This is a great way to sneak some healthy veggies in your kid's diets. My son doesn't mind eating this roulade, even knowing that it has spinach. Enjoy this dish!!!


Makes 4 servings

Ingredients

1 cup marinara sauce

2 eggs, beaten

1 cup whole wheat bread crumbs

1/4 cup onions, chopped

2 cloves garlic, minced

1 tsp dried basil

1tsp dried oregano

1tsp ground mustard

1 lb ground chicken

1 package (10 ounces) frozen spinach, thawed and squeezed

1/2 cup mozzarella cheese

Directions

1. Combine 1/4 cup marinara sauce, eggs, bread crumbs, garlic, basil, oregano and mustard. Put the chicken over and mix well.

2. On a sheet of wax paper, pat the chicken mixture into 12 inch by 8 inch rectangle. Sprinkle with spinach and cheese. Roll up jelly roll, peeling the waxed paper away while rolling. Place seam side down in a baking pan coated with cooking spray.

3. Bake uncovered, at 350 F for 50-60 min. Let stand for at least 5 min before slicing. Serve with the remaining marinara sauce.
