Chinese Omelette

This yummy omelet disappears quickly so prepare to make lots to keep up with how quickly it vanishes from the serving plate. This is not your traditional cheesy omelet; this version is much healthier and so surprisingly yummy. Great as brunch or dinner served with steamed rice or fried rice. Feel free to use any kind of vegetables you like, tomatoes or mushrooms work very good. A truly unique dish, try it!!!

Makes 4 servings

IngredientsChinese Omelette

8 eggs, lightly beaten

2 cups cooked chicken breast, shredded

1 lb medium cooked shrimp, peeled and deveined

1/2 cup frozen peas, thawed

2 tbsp fresh shives, chopped

2 tsp light soy sauce

dash of chilli sauce

2 tbsp vegetable oil

Directions

1. Mix the eggs, shredded chicken and the shrimp.

2. Stir in the chopped chives, soy sauce, peas and chilli sauce, mix very well.

3. Heat the oil in a large skillet. Add the egg mixture, tilting the pan to coat the base completly. Cook over a medium heat, gently stirring the omelette with a fork, until the surface is just set and the underside is a golden brown color.

4. When the omellet is set, slide it out the skillet and cut it into squares or slices. Serve with steamed rice.

Note: You can sprinkle the omellete with toasted sesame seeds to add extra flavor.
