Chocolaty Banana Walnut Cake

The melding of banana, walnuts and chocolate chips gives this cake a special and very wonderful flavor. This is a very versatile and fast cake recipe. Not only is it moist and delicious, but it is fast and super yummy. I often use the same batter to make banana bread and muffins, it always comes out perfect. I just love the simple lemon glaze, and I think it blends wonderfully with the flavors of the banana, nuts and chocolates. You can also use chocolate or cream cheese frosting, it will be equally divine. Try it!!!

Makes 8 servings


1 cup all purpose flour

7 tablespoons butter, room temperature

4 tablespoons sugar

1 cup semi-sweet chocolate chips

1/2 cup walnuts, chopped

2 large very ripe bananas, mashed

1 large egg

2 tablespoons cocoa powder

1 tsp baking powder

1 tsp baking soda

1 tsp vanilla extract

Lemon Glaze

8 tablespoons confectioners’ sugar

4 tablespoons fresh lemon juice


Preheat the oven to 350 F. Butter 1 (8-inch) round cake pan.

1. Beat the soften butter with an electric mixer for 2-3 minutes until light and fluffy, add the sugar and contitue to cream. Slowly add the egg and the vanilla and mix very well.

2. In another bowl, sift together the dry ingredients: flour, baking powder, baking soda, pinch of salt.

3. Add the mashed bananas in the butter mixture, mix very well. Add slowly the dry ingredients and mix until well incorporated.

4. Devide the batter into two parts. Add the cocoa powder to one part and mix well.

5. Pour the chocolate batter in the cake pan, sprinkle with the walnuts and the chocolate chips and then pour the white batter.

6. Bake for about 30-35 minutes or until a cake tester comes out clean.

7. To make the lemon glaze, mix the confectioners’ sugar with the fresh lemon juice until well incorporated. Pour it over the cooled cake. Let it sit for at least 30 minutes and serve.
