Citrus Herb Roasted Chicken

A wonderful and simple twist on your traditional roasted chicken that will please your guests and make your house smell fantastic! Use this as your crown dish for Christmas or New Year parties and guests will praise you for your culinary skills! I've used this recipe ever since I roasted my first chicken. Our whole family loves it and always looks forward to it. The combination of oranges, poultry rub, and garlic makes this chicken unique and delicious. Enjoy!!!

Makes 6 servings

IngredientsCitrus Herb Roasted Chicken

1 whole chicken (5-6 lb)

1 tbsp dry poultry rub

2 oranges, peeled and quartered

1 small onion, chopped roughly

Seasoning topping

2 cloves of garlic, minced

2 shallots, minced

4 tbsp olive oil

Salt and black pepper

1 tbsp poultry rub


Preheat oven to 425 F.

1. Clean the chicken, pat dry. Rub inside of the chicken with 1/2 tbsp poultry rub. Combine orange quarters and onions with the remaining poultry rub and insert into the cavity.

2. Place the chicken in a roasting pan, breast side up.

3. To prepare the topping, combine the herb seasoning in a bowl. Spread half of the topping under the skin of both breasts. Rub the remaining all over the chicken.

4. Cover with foil and bake for approximately 70 min, then uncover and bake for another 20 min to brown the chicken.

Let rest before carving.
