Cod in spicy tomato sauce

If you want to impress your family or friends, do it with simple goodness. Fresh cod fish fillets simmered gently in this fresh chili and tomato sauce, yummy. Serve with a brown rice pilaf and a green salad. It is so simple and easy that anyone can whip up this quick and easy cod recipe. Enjoy!!!

Makes about 3-4 servings

IngredientsCod in Spicy Tomatoe Sauce

1/2 lb cod fillet (or any white firm fish)

1 medium white onion, chopped

2 medium tomatoes, chopped

2 tbsp olive oil

1 tbsp white wine vinegar

1 medium fresh red chilli, finely chopped

salt and fresh black pepper

2 tbsp fresh mint, chopped, for garnish


1. Heat the oil in a medium frying pan. Add the onions and cook until soft, add the chopped tomatoes, the chopped red chilli and the vinegar. Season to your taste and simmer covered for about 15 min.

2. Add the fish fillets in the sauce, cover and simmer on very low heat for about 20 min or until the fish is cooked. Sprinkle with chopped mint.
