Cranberry Couscous Salad

This is a wonderful summer salad. The fresh vegetables keep the salad very refreshing and light; so, this salad is excellent for a summer lunch or as a side dish for dinner. Enjoy this salad because it has a very good combination of texture, it is delicious, and very healthy.

IngredientsCranberry Couscous Salad

1 cup chicken broth

3/4 cup couscous, uncooked

1/2 cup cranberries, dried

1/2 cup celery, chopped

1/2 cup carrots, shredded

1/4 cup green onions, chopped

1/4 red bell pepper, chopped

1/4 cup slivered almonds, toasted

Dressing

3 tbsp red wine vinegar

2 tbsp olive oil

1 tbsp Dijon mustard

Salt and black pepper

Directions

1. Prepare the couscous. Fluff with a fork and let stand.

2. Combine the couscous, cranberries, celery, carrots, onions, bell pepper and almonds.

3. Combine the dressing ingredients in a jar and pour over the salad tossing well. Chill before serving.
