Easy Madeleines

The greatest cookies I have ever eaten, so simple yet so delicious. Soft, buttery and very aromatic cookies that are perfect in the morning with a cup of coffee or just as a snack. You can sprinkle the top with confectioners' sugar or dip the tips in chocolate. Yummy!!!!

Makes 24 cookies

IngredientsEasy Madeleines

4 large eggs

3/4 cup sugar

1/2 tsp pure vanilla extract

1/4 pound (1 stick) unsalted butter, melted and slightly cooled

1 cup all purpose flour

1 tsp baking powder

1 tsp lemon zest

Semi-sweet chocolate, melted (optional)

Directions

1. Preheat the oven to 350 F.

2. Grease and flour 24 Madeleine molds.

3. In a large mixing bowl, combine the eggs, sugar and vanilla. With an electric mixer cream the mixture until pale and fluffy, about 10 minutes.

4. In another bowl, combine the flour and baking powder.

5. Add the lemon zest and half of the flour mixture and beat on medium speed until well incorporated. Add the remaining flour mixture and mix again until well incorporated.

6. Add the melted butter in a steady stream and continue mixing until well mixed. Let rest for 10 minutes.

7. Spoon the batter into the molds so they are two thirds full. Bake until lightly golden, 12-15 minutes.

8. Remove from the oven and carefully pop them out of the pans onto a wire rack. The cookies can be served warm or cooled and dipped in the melted chocolate if desired.
