Filled Veggie Bites

These veggie bites are inexpensive, quick to prepare and always a favorite in our house. If you want to make a little something special for dinner, try this recipe. Easy, tasty and looks very pretty on the plate. The flavors blend very well, and the fresh vegetables give this appetizer a special crunch and taste.

IngredientsFilled Veggie Bites

12 cherry tomatoes

12 fresh snow peas

1 can (6 ounces) crabmeat or tuna, drained and flaked

2 tbsp. cream cheese

1 tbsp. finely chopped green onions

2 tsp. sour cream

2 tsp. chili sauce

1 tsp. lemon juice

½ tsp. prepared horseradish, optional


1. Cut the top of each tomato; scoot out pulp with a small spoon and discard. Drain the tomatoes on a paper towel for 1-3 hours.

2. Simmer the snow peas in boiling water for 1-2 min.  They must be crisp tender. Drain and place the snow peas in iced water. Drain and pat dry; refrigerate.

3. In a bowl combine the remaining ingredients, mix well. Using a knife, make a slit down the side of each pea pod. Fill the peas and tomatoes with the mixture. Cover and refrigerate for at least 30 min.
