Lemon Orzo with Feta Cheese

I absolutely love this dish. Colorful presentation and the flavors of lemon and mint make this orzo dish great for picnics or side dish. The herbs and vegetables give this fresh-tasting pasta salad a colorful appearance, while the cheese and the fresh lemon juice add a nice kick. This recipe has easy ingredients and is a great light lunch or dinner. This is a great, fresh summer side dish and goes great with any meal.

IngredientsLemon Orzo with Feta Cheese

  • 1 cup uncooked orzo

  • 2 tablespoons olive oil

  • 1 teaspoon dried mint

  • 1 teaspoon salt

  • 1/2 ¬†teaspoon paprika

  • 2 strips lemon zest

  • 2 scallions, chopped

  • 1/3 cup feta cheese, crumbled

  • Juice of one lemon



1. In a medium pot bring 2 1/2 cup water to a boil; add the orzo pasta, olive oil, dried mint, salt, paprika and the lemon zest. Cook stirring occasionally until the orzo is tender, about 12 to 15 minutes.

2. Take the pasta from the heat, let cool slightly and add the chopped scallions, the feta cheese and the juice of one lemon. Season with salt and pepper to your taste.
