Light Potato Salad

A new, fast version of the old favorite, this refreshing potato salad is sure to please! The green chilies give it a delightfully different flavor. Try it for your next family dinner or picnic. When I found this recipe in a cook book, I was hesitant. Potato salad with green chilies? It turns out to be delightful. Very simple and very delicious!

IngredientsLight Potato Salad

2 lb red or white potatoes, cubed

3/4 cup mayonnaise

1/3 cup low fat yogurt

1/3 cup fresh cilantro, chopped

1 can (4 ounces) green chilies, chopped

1/2 cup celery, chopped

1 tbsp fresh lemon juice

1 tsp chili powder

1/4 tsp garlic powder

Salt and black pepper


1. Place the potatoes in a pan and cover with cold water. Bring to a boil and simmer for 15 min or just until tender. Drain and rinse with cold water.

2. In another bowl combine the rest of the ingredients and toss with the potatoes. Refrigerate for at least 2 hours.
