Medley Salad 

This healthy alternative to pasta salad is perfect for casual summer dinners. You can serve it as a main dish with the tuna or without it for a nice rice side. Use any combination of vegetables you like. It is very light and refresing. Enjoy!

Ingredients

2 cups brown rice, cooked

1 (6 ounce) can light water-packed tuna, drained and flaked

1/2 cup olives, sliced

1/2 cup canned corn

1 medium tomato, diced

1 cup bell pepper, chopped, any color

1/4 cup green onions, sliced

Dressing

4 tbsp olive oil

2 garlic cloves, minced

4 tbsp fresh lemon juice

1 tbsp Italian seasoning

1 tsp sugar

Salt and black pepper

Directions

Combine the first 7 ingredients. In a jar, combine the dressing ingredients, shake very well and pour over the salad. Toss to coat. Cover and refrigerate for at least 1 hour.
