Pizza with grilled veggies

I found this recipe in a cook book years ago. Now it is a hit in our house. Great for parties or a quick family dinner. A TRUE GOURMET PIZZA, made even better because it's fast, inexpensive and healthy! Grilled veggies, garlic tomato sauce, parmesan and mozzarella - it's the most beautiful pizza you'll ever see... or eat!

Ingredientspizza with grilled veggies

Pizza Dough

1 package active dry or fresh yeast

1 teaspoon honey or sugar

1 cup warm water

3 cups all-purpose flour or bread flour

1 tablespoons extra-virgin olive oil

1 teaspoon salt


1 medium eggplant, sliced 1/4 inch thickness

1 large red or yellow bell pepper, sliced

1 large red onion, sliced

2 cups mozzarella cheese, shredded

1/2 cup Parmesa cheese, shredded

1/2 tsp garlic powder

1 tsp italian seasoning

1 cup pizza sauce, homemade or canned

2 tbsp cornmeal


I make pizza dough in a food processor fitted with the steel blade.

1. First, dissolve the yeast and honey or sugar in 1/4-cup warm water in a small bowl.

2. In a food processor combine the flour and the salt. Pulse once or twice, add the remaining ingredients, and process until the dough begins to form a ball.

3. Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a warm spot for about 30 minutes.

4. Meanwhile prepare the grill. Brush the veggies with olive oil and grill them until soft. Season with salt and black pepper.

5. Preheat oven to 475 degrees F (245 degrees C). Sprinkle a large pan with cornmeal. Roll or pat dough out on a lightly floured surface until it is the size of the pan you are using; place on pan.

6. Spread dough with sauce, then sprinkle with garlic powder. Cover with cheeses. On top of the pizza, arrange the grilled vegetables. Sprinkle with italian seasoning, garlic powder and Parmesa cheese if desired.

7. Bake in preheated oven for 15 to 20 minutes, or until dough is baked, cheese is melted and toppings are lightly browned.
