Potatoes and Chicken Croquettes  

These croquettes are a pleasant twist to the traditional potato croquettes made from mashed potatoes. I use shredded boil potatoes mixed with shredded cooked chicken breast, seasonings and the result is amazing. Crispy, flavorful croquettes that my son loves very much. I hope you will enjoy these treats as much as we do!

½ lb cooked chicken breast, minced

½ lb potatoes, boiled and shredded

1 egg

1/2 tsp salt

1/4 tsp fresh black pepper

1 tbsp fresh chopped parsley

1 cup all purpose flour

1 egg, slightly beaten

1 cup seasoned bread crumbs


1. Mix the shredded potatoes with the minced cooked chicken breast. Add the salt, black pepper, parsley and the egg. Mix everything very well.

2. Make small croquets, dip them, 1 piece at a time, in flour, shaking off excess, then egg, then bread crumbs, shaking off excess.

3. Fry the crockets in light olive oil or canola oil. Serve hot with sour cream.
