Roasted Chicken with Fingerling Potatoes (Tuscan Style)

This tender roasted chicken with fingerling potatoes and Italian seasonings is even more delicious than its aroma while baking. This chicken recipe is simple, very tender, juicy, and delicious. The potatoes soak in the chicken, tomato and wine juices and are so good. This is a one pan meal that's in the oven in less than15 minutes. Tuscan seasonings, garlic, tomatoes and wine create a mouth watering aroma. Enjoy!!!

Makes 4 servings

IngredientsRoasted Chicken with Fingerling Potatoes

4 boneless chicken breasts

1 tbsp canola oil

1 tbsp Tuscan seasoning (a blend of oregano, paprika, fennel, garlic, onions). You may use a similar product

1 medium white onion, diced

4 cloves garlic, minced

1 red bell pepper, diced

1 lb fingerling potatoes, halved

1/4 cup white wine

1 (14-1/2 ounce) can stewed tomatoes

Fresh basil

4 slices fresh mozzarella


1. Preheat oven to 350 F.

2. Place the chicken in a mixing bowl. Add oil and Tuscan seasoning. Coat well and set aside.

3. Heat an oven proof pan, add the chicken and brown on each side. Add the onions, garlic, bell pepper, and potatoes. Cook for 2 min. Add wine and tomatoes.

4. Place the pan in the oven and cook uncovered for 20-25 min or until the chicken juices run clear.

5. Stir basil into the pan. Place cheese on top of the chicken and return to the oven until the cheese melts.
