Roasted Chicken with Honey Glaze

When you want an impressive centerpiece for a family dinner or a special-occasion meal, you can't go wrong with this golden roasted chicken. The moist, tender meat is enhanced with aromatic flavors of sweet honey and spices. This chicken is roasted slowly in the oven and basted with this amazingly simple but delicious honey glaze. Amazing!!!

Makes 6 servings

IngredientsRoasted Chicken with Honey Glaze

2 small (3 lb) chickens, cut into quarters

1 tablespoon light olive oil

Honey Glaze

3 tbsp honey

Juice and finely grated rind of 1 lemon

1 tbsp fresh rosemary, finally chopped

1 tbsp dry white wine

1 tbsp white wine vinegar

1 tbsp Dijon mustard

1 1/2 tbsp olive oil

Directions

1. Preheat the oven 350°F.

2. Brush the chicken with oil and season lightly. Place on a rack in a roasting pan, skin-side-down, and roast for 20 minutes.

3. To make Honey Glaze: Combine all the ingredients in a small pan. Bring to the boil, reduce the heat and simmer for 5 minutes.

4. After cooking one side, turn the chickens over and baste well with the warm glaze. Return to the oven and roast for 20 minutes. Baste once more and cook for a further 15 minutes. Serve hot or cold.
