Spinach Lasagna

This is a fabulous lasagna made with lots of good for your spinach and yummy cheeses. The uncooked lasagna noodles make this recipe very easy and fast to fix. A very old friend of mine gave me this recipe years ago, and this was my first lasagna that I cooked. It is so good and easy, even an inexperienced cook can make it. Use homemade marinara sauce; it really makes a huge difference. This is one of the easiest lasagna recipe you will find. Enjoy!

IngredientsSpinach Lasagna

1 lb Ricotta cheese (15 ounces is fine)

2 cups shredded low fat mozzarella cheese

1 egg

1 tsp salt

3/4 tsp oregano, dry

1/2 tsp black pepper

8 ounces lasagna noodles, uncooked

1 quart jar of marinara sauce, use homemade

2 pkg. chopped frozen spinach, thawed and drained

1 cup water

Directions

1. Mix the ricotta, 1 1/2 cups mozzarella cheese, egg, spinach, and seasoning.

2. Grease lightly a 9 by 13 pan and preheat the oven at 350 F.

3. Coat the bottom of the pan with 1/2 cup marinara sauce, place one layer of uncooked lasagna noodles, 1/2 of the cheese mixture and then repeat. Top with another layer of noodles and the remaining sauce. Sprinkle with the mozzarella cheese, pour the water around the edges and cover with foil.

4. Bake for 1 hour. Uncover the lasagna and cook for another 15 minutes or until the cheese is melted and lightly brown.

Very interesting recipe. Traditionally lasagna is full of meat and quite heavy, this recipe is light and very simple. My daughter liked it but my husband was not very impressed, he is a meat lover. Next time I will probably add some ground beef though.

I used cottage cheese instead of ricotta cheese, fresh spinach and a store bought jar of sauce. The lasagna came out beautiful and yummy.
