Split Pea Soup

This soup is the perfect comfort food! Warms to the toes! It is a thick soup that is both satisfying and healthy. This soup is a staple in our kitchen because it is amazingly delicious and easy to make. You can add smoked ham or bacon for extra smoky flavor but we like it simple.

IngredientsSplit Pea Soup

1 cup yellow onions, chopped

4 tbsp olive oil

2 cloves of garlic, minced

1/8 tsp dried oregano

Salt and black pepper

2 cup carrots, diced

1 cup boiling potatoes, russet works very well, diced

1 lb dried split green peas or yellow

8 cup homemade chicken stock

Directions

1. In a large pot, sauté the onions and garlic with olive oil, oregano, salt, and black pepper until the onions are tender.

2. Add the carrots, potatoes, the split peas and chicken stock. Bring to a boil, and then simmer for about 1 hour, until the peas are soft. Skim off the foam while cooking. Stir frequently because you need to keep the solids from burning on the bottom. Add salt and black pepper to your taste.
