Spring Salad with Cranberries and Walnuts

Colorful, crunchy and an interesting blend of flavors. This salad looks and tastes very fresh and has wonderful flavors from the cranberries, walnuts and the dressing. Very simple yet very impressive! This recipe was taken from a cookbook and became a must on my table when we have guests. Very quick to fix and very gorgeous.

IngredientsSpring Salad with Cranberries and Walnuts

6 cups fresh spring mix greens, or any kind you like

1/2 cup toasted walnuts, chopped

1/2 cup dried cranberries

1/2 cup feta cheese, crumbled

Dressing

1/3 cup olive oil

2 tbsp red wine vinegar

1 tbsp lemon juice

2 tbsp sugar

1/2 tsp salt

1 tsp Dijon mustard

1/2 cup minced shallots

 Directions

1. In a bowl mix the greens with the nuts and cranberries.

2. In a jar combine all ingredients for the dressing stirring very well and pour over the salad tossing gently. You can add sliced grilled chicken on top for a satisfying dinner.
