Three-Herb Carrot Salad

If you like carrots, here's a great recipe. It's easy to prepare and healthy. When I found this recipe, I was very happy because it is a great alternative to the mayonnaise, raisin and carrot salad that is mostly prefered. This salad is packed with flavor from the fresh herbs; therefore, you will never find it blend or too heavy. It is a great side to an warm ham or a roasted piece of meat.

IngredientsThree Herb Carrot Salad

1 lb baby carrots

2 tbsp olive oil

1/4 cup fresh dill, chopped

1/4 cup fresh oregano, chopped

1 tbsp fresh thyme, chopped

1 tsp lemon peel, grated

3 tbsp lemon juice

1 tbsp sugar


1. Place the carrots in a pot of boiling water. Cook for 5 min or until tender-crisp. Drain and rinse with cold water.

2. Combine the carrots with the remaining ingredients and toss for 2 min to bruise the herbs and bring out the flavors. Chill in the refrigerator. Serve with romaine lettuce or your favorite greens.
