Veal Scaloppini in Lemon and Parsley Sauce

A lemon-flavored sauce perfectly compliments thin cutlets of golden fried veal steaks. This is my husband's most favorite Italian dish, and we always have veal scaloppini for family gatherings. As almost any Italian dish, this recipe is simple, earthy and satisfying. I like serving a light green salad with this dish.

Makes 4 servings

IngredientsVeal Scalopini

3 tbsp olive oil

1 tbsp butter

8 thin veal steaks

all purpose flour, for coating

2 tbsp lemon juice, fresh

2 tbsp fresh parsley, chopped

lemon slices, to garnish


1. Heat the oil and half the butter in a large frying pan. Coat the veal steaks in the flour and add to the pan. Cook until lightly browned on both sides. It should take no more than 1 minute on each side. Don't cook longer, it will make the meat tough. Transfer the veal shanks to a warm plate and season with salt and black pepper.

2. Lower the heat and add the lemon juice, parsley and remaining butter to the pan, stir to combine. Add the veal steaks, turning them in the sauce. Serve hot and garnish with lemon slices.
